A reversal to a simpler form, such as a physical reaction involving vegetable adhesives, characterized by a reversion to a simpler molecular structure. An example of retrogradation would be a change in starch pastes from low to high consistency upon aging, and, in extreme cases, a separation of more-or-less solid gel from the aqueous solution.
