Spreadsheets for environmental monitoring

I am looking for examples of Excel spreadsheets (or other format
compatible with OpenOffice) on climate control.  A small archive is
actually collecting date, temperature (deg. C) and relative humidity
values from some months to now and, since they don't have
dataloggers, all the info is recorded on paper.

The idea is for us to be able to easily create some charts that will
make it easier for staff to understand preventive care measures
staff.
