I think you are possibly suffering from a common misconception here.

Although the analogue input is converted into finite steps,
these steps are 'smoothed out' when the final D/A conversion takes
place.

When you play a CD (or any other digital audio format) you are *not*
listening to a stepped waveform. The brain isn't being asked to
interpolate between the steps, because they don't exist.
