Since we have a couple of lists here, I thought Jonathan's was great and I'd like to add mine in his format:

·     Samplitude Pro (recommended)
            Version 8.0 is due out RSN. I'm using 7.32a and really like it.
            It is, indeed, very gentle on the audio.
