The vinyl is plastic (deformable) only during the manufacturing process.
Once it cools it becomes an elastic solid.

When moderate pressure is applied to such a solid, it returns to its
original shape when the pressure is removed. Rubber is the obvious
example, as opposed to dough which has low elasticity.

Deformation only occurs when you exceed the elastic limit of the
material.

For many years, pickup cartidges for LPs have been designed so that
there is no permanent deformation of the groove. Early models could and
did damage the groove.
