lecithin

A lipoid, or fatty acid, substance found in all animal and vegetable cells. Commercial lecithin is a mixture of phosphatides and glycerides obtained in the manufacture of soybean oil. It is soluble in mineral oils and fatty acids and is dispersible in animal and vegetable oils. It is one of the most effective materials used to assist in the formation and stabilization of emulsions.
