It is possible that keeping it in the fridge would help. What I have done, however, is to purchase the dry Modostuc powder instead (Modostuc 30 riempitivo) and I mix it with water as I need it. It is very easy and there is the added benefit of being able to control consistency by varying the amount of water added.
