Actually, your quote of yourself explains, to some extent, why
these pauses would not be found on spoken-word 78's, other than
on-the-spot "actualities" (which were not recorded to any extent
during the 78 era!).

A recording, during this era, had to be a "finished product" and
as such effectively perfect...and multiple attempts at a recording
were made until this perfection was attained. Versions with audible
errors were rejected, and another attempt made to capture an
error-free rendition of the performance. In many cases, trained
recording artists were substituted for the individuals who were
often credited as having made the recording, if the latter were
unfamiliar with recording and thus likely to make errors while
recording...
